Not just enjoyed by pollinators, borage has captivated people throughout history, believed to dispel melancholy and bring courage. Considered sacred by the Druids, soldiers would consecrate their weapons with the star shaped petals and drink borage-infused wine before battle. Seeds can be sown indoors/outdoors in spring in well draining, poor quality compost. Cut flowers to encourage new growth and extend flowering season. Add borage flowers to salads, soups and freeze into ice cubes and add to drinks.
