We currently offer 2 different types of cinnamons to choose from: - Ceylon cinnamon - true cinnamon has a sweeter, more delicate flavor with floral hints, & the cinnamon sticks themselves are softer & more fragile - Cassia Cinnamon - similar to traditional store bought cinnamon, rough, hard to break quills, has a spice but lower heat Every cinnamon quills isn’t the same size! We package our kits based on cinnamon weight, not by the count, as this ensures a consistent quality end product.
