Chile de rbol, otherwise known as a Bird’s Beak or Rat Tail chile, is a vibrant red Mexican pepper. Heat-wise, it sits around 15,000-30,000 Scoville units which puts it hotter than jalapeno or serrano, but not as hot as habanero or thai. We find that has a very subtle tannic, nutty sort of flavour, & not much else but it excels at bringing on the spice without changing the other flavours of your dish too much. It’s a really good base chile to use when cooking for folks who like heat, but don’t want to have their faces melted off while you show off your super hots.
