This culture will make thick & creamy buttermilk (cultured buttermilk is different from the thin buttermilk that is a byproduct of butter-making). It is teeming with enzymes & high in potassium, vitamin B12, calcium, & riboflavin. This buttermilk is cultured using cold milk, & fermented at room temperature. in about 18 hours it will have set, & then is refrigerated for further setting. By setting aside some of the buttermilk from each batch to make your next batch, this culture should last you indefinitely if well taken care of.
